Paleo Lunch Idea Low Carb Egg Sandwich

Looking for an easy breakfast or lunch that’s low carb and Paleo friendly?  Here it is! I call this my bread-less low carb egg sandwich and let me tell you, it’s so delicious you won’t miss the bread. Super simple, uses produce that you already have and best of all? It’s fast.

Ingredients:

  • Egg
  • Mixed Greens
  • Heirloom Tomato
  • Avocado Mayo if desired
  • Salt/Pepper if desired

And that’s it. I spray my small frying pan with vegetable oil spray and fry the egg. While the egg is cooking, slice two slices from your heirloom tomato and place one slice on your plate. Top with mixed greens and Avocado Mayo if desired. When your egg is ready, place it on top of the mixed greens then place the second tomato slice on top.

And that’s it. Enjoy!
